Culinary Arts Certificate

Train with celebrated Culinary Institute of Charleston (CIC) chefs in a convenient, evening program with successful completion leading to career opportunities, educational advancement and personal growth. To earn a Culinary Arts Certificate, Culinary Arts Certificate, students complete Fundamentals of Culinary Arts and then enter the baking track or cooking track for the remaining two courses. Students may then apply the CEU certificate towards further education at CIC. If furthering studies, student must pass the Online ServSafe® Manager course. Note: Some classes may be available in future terms.

 

FUNDAMENTALS OF BAKING CERTIFICATE TRACK

Kitchen Fundamentals (XCUL-651)
Train on culinary essentials for chefs, including measurements, scaling, mise en place, knife skills, vegetable and starch cookery, baking techniques and breakfast cookery. This is a foundational course for the Culinary Arts certificate program. 

 

 

Introduction to Baking (XBKP-650)
Learn fundamental baking techniques including mixing, scaling, proofing and finishing. Make quick breads, artisan breads, pastries and assorted yeast dough products. Learn baker’s percentage, costing and product yield. Prerequisite: Kitchen Fundamentals

 

 

Introduction to Pastry (XBKP-651)
Practice advanced baking techniques including rolling, bagging and finishing. Make pies, tarts, cookies, cakes, frostings, fillings, and explore decorating techniques. Learn how to plate and package baked goods. Prerequisite: Introduction to Baking

 

 

FUNDAMENTALS OF COOKING CERTIFICATE TRACK

Kitchen Fundamentals (XCUL-651)
Train on culinary essentials for chefs, including measurements, scaling, mise en place, knife skills, vegetable and starch cookery, baking techniques and breakfast cookery. This is a foundational course for the Culinary Arts certificate program. 

 

 

Classical Cooking Foundations (XCUL-652)
Explore more advanced cooking techniques including moist, dry and combination cooking methods with beef, poultry, pork, lamb, game and seafood. Learn basic meat fabrication as well as safe and sanitary storage. Prerequisite: Kitchen Fundamentals

 

 

American Bistro (XCUL-653)
Gain an overview of cuisines from around the world, including Asia, Europe, the Mediterranean and Africa. Students are exposed to history, cultural influences and common recipes. Prerequisite: Classical Cooking Foundations

 

 

OPTIONAL COURSE

Online ServSafe® Manager
Exam is proctored by a Culinary Institute of Charleston certified instructor at any of the Trident Technical College campus or site locations. Students must be on campus to take the test. The online exam also allows you to access immediate results.
